All that's missing is Blue Yoshi, though I did manage to recreate those textures if that's of any use!
Fun fact: Red Yoshi and Blue Yoshi were planned during development, as seen in prerelease footage. In the final game, they were replaced by Pink Yoshi and Light-Blue Yoshi respectively, though the filenames for their textures are still named Y_TexRed.arc and Y_TexBlue.arc. A fireball-shooting Red Yoshi would eventually appear in Super Mario Maker 2; their appearance in the NSMBU theme possibly reuses the prerelease textures from this game.
