Well, time for facts on this one.
This and the Wii version use the same models since they were made by the same developer (Incinerator Studios) except PS3 internally has all parts on one model instead of separating the headlights and brake lights AND they have an extra UV maps for lightmaps.

This, like the PC/Xbox 360 version and unlike the Wii version uses gloss textures for extra effects. Many of the diffuse textures are bigger on PS3 than on Wii (Mater's body textures being 512x512 on Wii, 1024x1024 on PS3)
