The reason for jailbreaking is because all the models are in the download after the initial install and you can't access that with iTunes.
There is a way to rip IOS apps without jaibreaking. Download iTunes 12.6.3, Apple Support has it under "Deploy apps in a business environment with iTunes." That version comes with the app store and you can download the apps directly to your computer. Only problem is I don't think you can rip models that apps download after the initial installation, but it is slightly easier than jailbreaking.
You'll need to jailbreak your ios device or use a rooted android device to copy the game files to your computer and rip the models with AssetStudio
