I managed to find an archived version of the game at Internet Archive, featuring enough data to export a pretty decent amount of models, animations, textures, etc.
You can find it pretty easily by just typing "Crash on the Run" in the website.

@Danielcrash: If you've still got the game cache downloaded, then yeah it should be possible, as I would assume it wouldn't need to connect to the internet every time it needed to access a model.

Been playing this game for awhile now and i actually like it a lot,never noticed that Crash used normals,even the concept art looks sick as hell
